This is another of my fav recipes from Sweden! Food is yet another of my passions...
Swedish Salmon & Potato Bake with a Twist
Ingredients:
- 400 g gravad (marinated in salt) or smoked salmon - SLICED
- 8-10 Potatoes – cooked & cold
- 1 yellow onion
- 1 clove of garlic
- 2 dsp butter
- 1 pot of fresh dill – chopped
- 1 lemon - grated
- Black pepper
- 3-4 eggs medium
- 3,5 dl milk
- Boil or steam the potatoes. (I usually do them the day before)
- Preheat the oven 225 centigrades
- Slice the potatoes
- Chop the onion and sauté them in butter until they are transparent but without colour
- Place a layer of potatoes in a deep oven dish
- Then a layer of the salmon
- Followed by the onion and a smidgen of mixed grated pepper, grated lemon peel, pressed, minced garlic and a fair amount of finely chopped dill.
- Repeat this again adding another layer/layers and finishing up with a layer of potatoes.
- Whip the eggs and milk and pour over the salmon and potatoes then add some grated cheese.
Bake in the oven for 45-50 minutes.
Serve with a nice fresh salad
You can also serve with melted butter which is poured over the salmon bake…
